From 20 year old vines planted on schist soils on 36 hectares and harvested in early September manually. The grapes are de-stemmed, sorted, spend 1 week on the skins and fermented with wild yeast in granite lagar (5000L) for 4-5 days. Aged in French oak (300L). Not filtered or fined.
