We've been big fans of Hervé Souhaut for years. His uncompromising style leads him to label many of his wines with any name he chooses rather than allow the regulatory committees decide what he can and can't do. This new project of his consists of 75% Syrah with 25% Merlot fermented whole cluster with only indigenous yeast. His wines are as natural as they come but always impress with their polish.
