Cataluña is currently undergoing a real discovery of young, natural winemaking. The 400-hectare estate of Can Sumoi sits at six hundred meters of altitude in the Serra de l’Home range in the Penedès. Its 350-year-old farmhouse and stone walls accommodate thirty hectares of old vines; the wines are produced without additives, or added sulfites. Xarel-lo is one of the white grapes most commonly found in Cava (sparkling) wines of the region. This still version has a nutty, toasty note with a lovely, long finish.
